Avocado Cilantro Dressing

This is a super quick dressing that is so tasty on quinoa, gluten-free noodles, chicken, wraps or salads. You can even spread it on a burger to add some zing. I used a simple Ninja Blender to make it. Enjoy!

Avocado Cilantro Dressing

  • 1/2 of a ripe avocado, skins and pit removed

  • 1 handful of fresh cilantro leaves

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon lime juice squeezed from a fresh lime

  • 1/4 teaspoon Himilayan salt

Mix all ingredients in a blender until smooth. Can be stored in the refrigerator for 24-48 hours. Mix before serving.
