When feeding little ones with dietary restrictions, it can be difficult to make mealtime exciting. You can't make a bowl of fun mac & cheese or silly-shaped chicken nuggets - foods most moms can just grab off the shelf that their kids are eager to eat. I found myself rotating about the same 5 meals for my little one and feeling bad that his diet was pretty boring. Working a full-time job, I didn't have much time or energy to come up with new, allergen-free things for him to eat.

I realized that I could get my son so excited about mealtime by making his dish look pretty, using different colors, shapes and textures. I made this very simple breakfast for him and he loved it! It only has 6 ingredients - but sometimes the simplest things can make a little one's day. Here's how I made it!

Banana Rice Breakfast Bowl (for tots!)

  • 1/4 cup 100% brown rice hot cereal

  • 3/4 cup water

  • Pinch of salt*

  • Banana slices

  • Raisins

  • Pumpkin seeds

  • 100% pure maple syrup

Make rice cereal by boiling 1/4 cup cereal in 3/4 water with a pinch of salt. Transfer to bowl.

Top with banana slices, raisins, pumpkin seeds and maple syrup, to taste.

*Be sure not to use iodized salt if you have a corn-allergy. Iodized salt contains an ingredient made from corn.

To make this recipe, I use Arrowhead Mills Rice & Shine Hot Cereal and SuperSeedz Pumpkin Seeds, made in a dedicated allergen-free facility. Both are pictured below.
