What's better than a bright, sunny Spring morning? Celebrate the sunshine with your little one by surprising them with this fun, colorful breakfast bowl! The base is a plain, unsweetened coconut yogurt. I have found that the flavored yogurts (even if dairy-free), contain a lot of added ingredients that are often made from corn. The unsweetened version contains both calcium and cultures for your toddler's digestion. I use the SO Delicious brand of yogurt, typically found in most grocery stores and health food stores. The fresh fruits on top add vitamins and antioxidants, and the pumpkin seeds and coconut add protein and crunch. Enjoy!

Berry-Banana Smoothie Bowl (for tots!)

  • 1/2 cup unsweetened coconut yogurt (I use SO Delicious brand, since it is allergy-friendly)

  • Fresh strawberries, thin sliced

  • Fresh blueberries

  • Banana, sliced thin

  • Shredded, unsweetened coconut

  • Pumpkin seeds (I use Superseedz brand, made in allergen-free facility)

Place yogurt in the bottom of your bowl. Top with all toppings. Sprinkle with coconut palm sugar or drizzle with pure maple syrup if you'd like to add a bit of sweetness. Enjoy!
