Grain-Free/Allergen-Free Spice Drop Cookies
(baby-friendly)
2 tablespoons extra virgin coconut oil, softened
1/3 cup sunflower butter (you can also substitute almond butter)
1/4 cup blackstrap molasses
1/2 cup coconut sugar
2 flax eggs (prepare ahead of time by mixing 2 tablespoons ground flaxseed with 4 tablespoons water and letting it sit for 10 minutes)
1 teaspoon ground ginger
1 teaspoon baking soda
1/4 teaspoon Himilayan salt
1/2 cup coconut flour
Preheat oven to 350°F. Cover a baking sheet with parchment paper.
In a large bowl, cream together the coconut oil, sunflower butter, molasses and sugar using an electric mixer or whisk.
Add flax eggs, whip together until well incorporated.
In a seperate small bowl, mix together the ginger, cinnamon, baking soda, salt and coconut flour.
Add dry ingredients to the large bowl of wet ingredients and mix well.
Using a greased teaspoon-sized measuring spoon, drop small balls of dough onto your baking sheet, about 1 inch apart.
Bake for 15 minutes, until edges seem slightly browned and crisp.
Remove baking sheet from oven and let the cookies sit on the baking sheet for an additional 10-15 minutes (this helps to avoid crumbly cookies).
