Mini Home Fries Breakfast (for tots!)

Did you know that one potato has 8 grams of protein?! I sure did not. This fun and simple version of breakfast potatoes is one my dad used to make for me when I was little. Breakfast was pretty monotonous since I had so many allergies, so I would get so excited waking up to the smell of dad's tasty home fries.
One thing I have learned about feeding my children with dietary restrictions is that variety is key - not just to keep them interested, but for their nutrition, as well. Potato is a different starch that can be used in the breakfast rotation and contains a variety of nutrients not found in rice cereal and other grains. I have also noticed a significant taste difference between organic and non-organic potatoes. Organic potatoes are so delicious and flavorful (and not too much more expensive than non-organic)! (A little tip when shopping - try to choose potatoes that don't have any tint of green). I hope your little ones enjoy this yummy recipe!

Mini Home Fries Breakfast (for tots!)
1 large potato, diced (I use gold or russet)
1 tablespoon extra virgin olive oil
1/2 teaspoon Himilayan salt
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
In pan (preferably non-stick), heat olive oil, potatoes, salt and onion powder on medium-high heat.
Cook about 15 minutes, stirring every few minutes, until potatoes are soft and browned.
Remove from heat, sprinkle with smoked paprika, and serve.
