Tropical Rice Bowl

With warm weather around the corner, I start craving fresh, colorful ingredients. I decided to put my cravings into this nutritious bowl! It has lots of different colors, textures and flavors, making it totally toddler-approved. The ingredients are simple, but the flavors of the raw fruits and veggies are bold and tasty. The best part about this dish is that it involves minimal cooking. Here's how I put it together!

Tropical Rice Bowl
Make the coconut rice by combining 2 1/2 cups jasmine rice with 4 cups water, 1 can unsweetened coconut milk, and 1/2 teaspoon Himilayan salt in a saucepan. Bring to a boil and simmer on low for 20 minutes, stirring occasionally.
Spoon coconut rice into the bottom of each bowl. Top with:
Fresh pineapple, diced or cut into thin strips
Black beans
Scallions, sliced thin
Avocado, sliced or diced
Cherry tomatoes, halved
Orange bell peppers, diced
Fresh cilantro, chopped
