Pickled red onions are tasty, versatile, and add such beautiful color to your dish. Enjoy!

Quick pickled red onions
1 medium red onion, sliced into very thin strips
3/4 cup raw apple cider vinegar
1 teaspoon fine ground Himilayan salt
1 tablespoon sugar
Place onions in a sealable jar.
Add vinegar, salt and sugar. Seal lid and shake to combine. Store in the refrigerator for a few hours before eating to allow the onions to pickle.
