Sweet & Savory Butternut Soup
1 butternut squash, peeled and cubed into about 1 inch cubes
2 sweet potatoes, peeled and cubed
1 stock celery, sliced
1 medium sweet onion, sliced
7 slices fresh ginger root, peeled
1/2 teaspoon Himilayan salt
1/4 teaspoon black pepper
1 cup organic chicken broth (or vegetable broth)
1 can unsweetened coconut milk
Add butternut squash, sweet potatoes, celery, onion, ginger root, salt, pepper and chicken broth to a medium pan and simmer over medium-low heat for about 30 minutes, until all vegetables are soft.
Transfer all pan contents to a blender. Add coconut milk and blend on high until pureed into a thick, creamy soup.
Enjoy plain or topped with pumpkin seeds and ground nutmeg.
