Sweet & Savory Butternut Soup

  • 1 butternut squash, peeled and cubed into about 1 inch cubes

  • 2 sweet potatoes, peeled and cubed

  • 1 stock celery, sliced

  • 1 medium sweet onion, sliced

  • 7 slices fresh ginger root, peeled

  • 1/2 teaspoon Himilayan salt

  • 1/4 teaspoon black pepper

  • 1 cup organic chicken broth (or vegetable broth)

  • 1 can unsweetened coconut milk


  1. Add butternut squash, sweet potatoes, celery, onion, ginger root, salt, pepper and chicken broth to a medium pan and simmer over medium-low heat for about 30 minutes, until all vegetables are soft.

  2. Transfer all pan contents to a blender. Add coconut milk and blend on high until pureed into a thick, creamy soup.

  3. Enjoy plain or topped with pumpkin seeds and ground nutmeg.
